Each course is a masterpiece, showcasing fresh, local ingredients and exquisite flavors. To elevate your dining experience, each dinner is perfectly paired with a carefully selected wine, enhancing every bite. Whether you’re celebrating a special occasion or simply treating yourself to a night of true gourmet delight, this is one of our favorite offerings for an unforgettable evening at the cabin.

a three-course dining experience featuring our chef's signature creations, including a wine-pairing to be enjoyed with your dinner.

 

  • seasonal garden salad - foraged locally from Person Farms in Seymour and Zavel's Farms in corryton, tn

  • springer mountain pan-seared chicken or pan-seared rainbow trout with seasonal accompaniments

  • homemade cobbler with seasonal fruit and homemade ice cream

 

Chef's premium dinner                                                                                   $450 + 120/pp

the best of the best - a three-course meal featuring chef's premium offerings, including a wine-pairing to be enjoyed with your dinner and a palette cleanser.

 

  • Pear & goat cheese seasonal salad - local spring mix, candied pecans, poached pears, and sophia's goat cheese butterbean hummus, local root vegetables and tellico greens served with woodfired grilled toast, George olive oil, and JQ Dickinson sea salt

  • choice of filet or ribeye with seasonal vegatable accompaniment & potatoes or salmon over rice with sorrel & radish citrus salad

  • pot de creme with homemade whipped cream and fresh berries or goat cheese cheesecake with a blackberry compote and shortbreak pistacho crumble - made with goat cheese from greenhill creamery in Spring Hill, GA

 

Five-course tasting menu                                                     starts at $550 + $160/pp

you guessed it. 7 courses. the ultimate dining experience. Our chef will call you prior to the trip to hear all your hopes and dreams for this dinner, likes and dislikes - and then he'll go back and design a totally custom menu for you. Paired with a wine-pairing that will compliment your selections, of course. sample menu option below:

  • Smoked apple and citrus salad with 24 month aged mittens ham with blueberry ramp vinaigrette

  • dragged steak, tarter with salt cured egg yolk, and homemade lavash crackers

  • honey egg yolk with aged benton's bacon crumbles and fermented honey sauce on tellico grains wood fire-grilled toast

  • dry aged bone-in strip served on potato gnocchi with homemade gravy and mushrooms, served with swiss chard

  • bourbon caramel apple pie torte

Our chef will call you after you book this dinner to start putting together a menu for you! Because this will be a carefully curated meal just for you, we will send you an invoice for the base price once you approve the menu. Any outstanding invoices for the dinner must be paid no less than 5 days before your check-in to hold reservation. Please also let chef know if you'd like additional bottles of wine or other spirits included with your dinner, as the dinner comes with a single-bottle wine pairing. Sky is the limit though - we can't wait to serve and delight you!

For all private chef dinners - no cancellations. Please note, a tip to the chef after the dinner is welcomed and appreciated, but certainly not expected.
